Sweet Potato Muffin Recipe
Well I think I found my new favorite muffin recipe AND its with sweet potatoes. I do not like cupcakes, or super sweet muffins. I want substance otherwise I will eat five. These sweet potato muffins are pretty close to heaven sent. I tried out this recipe and tweaked it a bit to make it a tad healthier and to my liking.
INGREDIENTS
- 2 cups of mashed sweet potato
- 2 cups flour
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 3/4 cup vegetable oil
- 3 large eggs
- 1/2 cup ground flaxseed meal
- 1/4 cup oats

TOPPING
- 1 TB Brown Sugar
- 2 TB Oats
- Microwave sweet potatoes till cooked (I used 6 medium sweet potatoes and put them in microwave for ten mins)
- Peel skin off sweet potatoes and put sweet potatoes in a bowl
- Combine dry ingredients in separate bowl
- In your mixer combine: eggs, sugar, oil. Then slowly add the dry ingredients in mixer. Once its all mixed add the sweet potatoes
- Spray muffin pan (I prefer to NOT use muffin paper to cut back on waste) and fill each one half full they will get large!
- Sprinkle a tiny bit of oats and brown sugar on each muffin (I go VERY LIGHT on the sugar because the muffins are already sweet)
- Bake at 325 degrees for 30 minutes. Check after 20 mins and see where they are at
